Lyutenitsa is a traditional Bulgarian dish. In the process of cooking lutenitsa, great importance is attached to pre-baking vegetables, adding herbs and spices. Most often, the dish is consumed by spreading it on slices of aromatic bread.
It is necessary
- - 7, 5 kilograms of tomatoes;
- - 5 kilograms of red bell pepper;
- - 2.5 kilograms of eggplant;
- - 100 grams of salt;
- - 200 grams of granulated sugar;
- - vegetable oil;
- - ground black pepper;
- - ground red pepper;
- - greens.
Instructions
Step 1
To prepare the Bulgarian lutenitsa, take the eggplant, rinse it under running water, dry it with a kitchen towel, then cut each eggplant lengthwise in half and bake on the grill until the skin is completely browned. When baking the eggplants, be sure to turn them over from time to time so that the skin does not burn.
Step 2
When all the eggplants are baked, let them cool to room temperature. Then peel them and grind them in a blender until smooth. Spoon the eggplant mixture into a separate bowl.
Step 3
Take tomatoes, rinse and peel them. To help peel off the skins, dip the tomatoes in boiling water for a few seconds. Next, twist the tomatoes in a meat grinder or chop in a blender until smooth.
Step 4
Place the chopped tomatoes in a skillet, place over medium heat and simmer until the tomato paste has boiled down three times. Remove the pan from heat, transfer the tomato paste to a large saucepan, add the eggplant mass to it and mix everything thoroughly.
Step 5
Put the saucepan over medium heat and cook until the mixture of eggplant and tomato has the consistency of thick sour cream. Stir constantly, add salt, black pepper, red pepper and chopped herbs to it. Cook for a few more minutes and remove from heat.
Step 6
Rub the mixture through a sieve to remove unwanted seeds and transfer back to the pot. Add vegetable oil and simmer a little more. Arrange the finished lutenitsa in sterile jars and roll up.
Step 7
The Bulgarian lutenitsa is ready! You can serve lutenitsa with meat and fish dishes, vegetables, homemade bread.
