    • For the liver in sour cream sauce:
    • 500 g liver;
    • ½ cup sour cream:
    • 1 tbsp. a spoonful of flour;
    • 1 head of onion;
    • 2 tbsp. spoons of oil;
    • ground black pepper;
    • salt.
    • For liver stroganoff in white sauce:
    • 500 g liver;
    • 2 tbsp. tablespoons of ghee (margarine or ghee);
    • 1-2 heads of onions;
    • 1 tbsp. a spoonful of flour;
    • 1 glass of sour cream;
    • 2 tbsp. tablespoons of tomato paste.
    • For the liver in mushroom sauce:
    • 500 g liver;
    • 50 g dried mushrooms;
    • 200 g of ghee (or lard);
    • 200 g sour cream;
    • 1-2 heads of onions;
    • salt.

Instructions

Step 1

Liver in sour cream sauce

Wash the beef, lamb or pork liver, remove the film and bile ducts. Then cut into slices, salt, sprinkle with pepper, roll well in flour and fry on both sides in a skillet with melted butter. Peel the onions, chop finely and lightly fry. Transfer the liver to a shallow saucepan, add the fried onions, sour cream, juice from the frying pan, and one glass of broth (or water). Close the pan with a lid and put on low heat to simmer for 30-40 minutes. Place the cooked liver slices on a platter. Salt the sour cream sauce obtained during stewing and pour it over the liver. Sprinkle finely chopped parsley on top of the dish. You can serve pasta, fried or boiled potatoes as a side dish for the liver in sour cream sauce.

Liver beef stroganoff in white sauce

Rinse and clean the liver from films and large bile ducts. Cut it into small, elongated pieces. Chop the onions finely and fry lightly in oil. Heat the fat or oil in a skillet and add the liver to it. Season with salt and stir fry for 7-10 minutes. Then add the fried onions and dust with flour. Mix everything thoroughly and after five minutes add sour cream mixed with tomato paste. Place the lid on the dish and simmer the stroganoff over low heat for 10 minutes. Sprinkle with chopped dill or parsley before serving.

Liver with mushroom sauce

Soak dried mushrooms for 10 hours. Wash the liver and clean it from films and bile ducts. Cut the liver into small pieces and fry in a skillet with hot oil. Boil the mushrooms, catch them out of the broth with a slotted spoon and chop with a knife. Peel and cut the onion into rings. Fry it together with the mushrooms in a skillet with butter. Put the liver, mushrooms, onions in a ceramic pot and cover with the mushroom broth. Salt, add sour cream and put in an oven preheated to 200 degrees to bake for about 20 minutes. Fried potatoes are suitable for this dish as a side dish.
