New Year is a great occasion to please yourself and loved ones with a delicious duck cooked in an exquisite orange sauce, which gives the meat a piquant aroma. The recipe is quite simple to prepare, but you need to be patient, since the dish is time-consuming.
It is necessary
- –A home duck carousel (1 pc.);
- - ginger root (20 g);
- –Fresh oranges (2 pcs.);
- - lemon (1 pc.);
- - honey (8 g);
- –Salt and pepper to taste;
- –A pinch of marjoram.
Instructions
Step 1
First, prepare the sauce in which the duck meat will be marinated. To do this, take a deep container, take the ginger root and peel it off. Grate the ginger with a fine mesh grater. As a result, you should have a gingerbread mass.
Step 2
Next, take an orange, rinse and cut into two halves, then squeeze the juice with clean hands into the container where the ginger lies. Rinse the lemon as well and squeeze the juice into the same bowl. Then add the lemon zest, grated on a fine grater, to the resulting sauce. The last step in making the sauce is adding liquid honey. Finally, mix all the ingredients thoroughly.
Step 3
The duck carcass must be thoroughly rinsed with cool water from the outside and from the inside. Make a mixture of salt, pepper and marjoram, and then thoroughly rub the mixture over the whole duck. Take the orange and honey sauce and brush on all sides of the bird, not forgetting the inner surface. Use cooking foil to wrap the duck and refrigerate for 24-28 hours.
Step 4
The next day, unfold the duck, place the sliced orange slices on top of the meat, wrap them in foil again and place on a baking sheet. Cook the dish for 1-1.5 hours.
Step 5
Next, open the oven, remove the top layer of foil and continue to cook the meat for another 2 hours at a temperature of at least 210 degrees. Do not forget to periodically water the duck with the resulting juice, which will mix with the marinade.
