Instructions
Step 1
To prepare bulgur with meat, pour half a glass of chickpeas with water and leave overnight. Peel 12 small onions. Cut 500 grams of pork into cubes. Lightly fry the meat in vegetable oil, transfer to a plate and save the whole onion in the same pan. Boil the chickpeas for 15 minutes. Then remove from the pan, and put meat in its place, salt, add a little water if necessary and cook for about half an hour. Add the onion and cook for another 15 minutes.
Step 2
Transfer half of the meat and onion to a separate bowl and add 2 cups bulgur and chickpeas to the saucepan. Simmer in a saucepan over low heat until softened, uncovered. The consistency of the groats should resemble well-boiled porridge. Put the contents of the saucepan on a dish, pour with one glass of melted fat, put on top of the set aside half of the meat and onions, sprinkle with a pinch of cinnamon.
Step 3
Make a bulgur salad. To do this, boil 2 cups of water in a small saucepan and add 1 cup bulgur. Bring to a boil and cook over low heat for about 15 minutes. Remove the pot from the stove, wrap with a towel and cover. As soon as the cereal has cooled, transfer it to a salad bowl.
Step 4
Cut one glass of red grapes into halves. Rinse 3 celery stalks in cold water, dry and chop finely. Coarsely chop 30 grams of parsley and chop 20 grams of shallots. Chop 80 grams of walnuts with a knife. Add 30 grams of raisins, onions, parsley, celery, grapes and nuts to a salad bowl. Season with salt and pepper to taste, season with 3 tablespoons of balsamic vinegar and the same amount of nut oil, mix all the ingredients.
Step 5
Make bulgur porridge with pumpkin and quince. To do this, peel one large quince and 200 grams of pumpkin, chop into small cubes. Mix 2 tablespoons of vegetable oil with 2 teaspoons of honey and fry the pumpkin and quince in a deep frying pan in this mixture. Then cover the pan with a lid and simmer for 5 minutes. Pour in 170 grams of bulgur, salt a little and add enough water so that all products are only slightly covered.
Step 6
Simmer over low heat for 10 minutes, then stir, turn off the heat and leave under the lid for another 15 minutes. Place the contents of the skillet on a serving platter and garnish with small seedless grapes.
