Step 1
Eggs with bacon
Cut off pieces of skin from the bacon and place them in a skillet with heated vegetable oil. Let the fat melt over low heat, add the peeled bacon and brown well on both sides. Remove the skins and set the toasted bacon slices aside. Break eggs into a skillet one at a time and fry them over medium heat. When the protein has set, tilt the pan slightly, scoop up the fat with a teaspoon and pour it over the eggs. Serve hot, along with wheat or rye croutons.
Step 2
Fritters with bacon
This hearty dish can be served for breakfast. Sift flour. Beat eggs with salt and milk, add flour in portions. Knead a dough that resembles thick sour cream in consistency.

Fry thin slices of bacon in warmed lard. Remove bacon from skillet and place in warm place. Reduce heat and spoon dough portions into skillet with hot fat. In a deep bowl, combine sifted wheat flour and oatmeal with egg. Add salt, 150 ml milk and beat the dough until smooth. Heat some vegetable oil in a skillet and pour 3 tablespoons of dough onto it. Spread it over the entire bottom by turning the pan. Wait for the bottom of the pancake to brown and turn it over to the other side. In this way, prepare three pancakes.
Step 6
Mix the remaining milk with 3 eggs and salt. Whisk the mixture and brown it on both sides. Divide the resulting omelet into three parts. Place scrambled eggs, bacon and tomato slices on each pancake. Fold the pancakes in half and serve.

Potato fritters
Peel the potatoes and boil them in salted boiling water. Mash the tubers into a puree with butter and salt. Add the egg and bacon, cut into thin strips. Make small flat cakes from the mixture and fry them in ghee until golden brown. Serve hot with sour cream or tomato sauce.
