Step 1

First method: Wash and sort out the mushrooms, then put them to boil (15 minutes after boiling the water). After that, put the honey mushrooms in a colander, let the water drain, cool and pass through a meat grinder. Next, put the mushroom mass in a deep container, pour oil into it and simmer for 30 minutes. Fry finely chopped onions in advance until golden brown, then pour them into the mushrooms and simmer for another ten minutes. Add salt and pepper to your taste, and add oil as needed as you cook. There should be a lot of onions in this recipe (about a third of the mushrooms), and caviar will be considered ready if the onion does not crunch on the teeth. After stewing, cool the caviar, and then arrange in the jars. Add garlic if desired, which can be grated or crushed.

Method two: Wash the mushrooms and cook. After boiling water, they must be boiled for 20-25 minutes. Remove the resulting foam all the time. Then pass the mushrooms through a meat grinder or chop in a blender. Take a few onions and carrots, peel and chop (onion rings, and grate the carrots on a coarse grater). After that, pour a glass of sunflower oil into a saucepan, into which then put the onion and bring it to softness. After the onions are ready, put the carrots in the same container and bring them to a soft state.

After stewing, pass the onion and carrot through a meat grinder. Then mix it with caviar, add oil, salt and pepper to taste. Simmer over the fire for about 45-50 minutes, remembering to stir. At the last stage, put the caviar in the prepared jars, fill it with oil (so that it does not darken for a long time) and roll up the lids (you can close it with nylon). Then turn the jars over and cover with a warm wrap or blanket until the caviar has cooled.
