Telnoe is a dish of Old Russian cuisine, prepared at first only in monasteries. Body - crescent-shaped fish zrazy. The dish is called so because it is prepared from the body of a fish.
It is necessary
- - fillet of pike perch or pike - 0.5 kg;
- - loaf - 150 - 200 g;
- - milk - 1 glass;
- - salt, pepper - to taste;
- - canned mushrooms - 3 tbsp. l;
- - eggs - 3 pcs;
- - onions - 3-4 pieces;
- - vegetable oil - 100 ml;
- - flour - 4 tbsp. l;
- - breadcrumbs - 1/2 cup;
- - greens of dill and parsley.
Instructions
Step 1
Remove the ridge and bones from the fish, cut the fillet into large pieces. Break the loaf into arbitrary pieces and soak in milk for 5-10 minutes. Mix the soaked loaf with fillet pieces and scrolling twice through a meat grinder (you can cook minced meat in a blender). Add salt and spices to the finished minced meat and knead until smooth.
Step 2
Finely chop the pickled mushrooms. Peel the onions, cut into small cubes and fry in vegetable oil until tender. Hard-boiled eggs, peel and finely chop. Finely chop the dill and parsley. Prepare the filling: in a bowl, mix the mushrooms, eggs, fried onions and herbs. Salt and pepper to taste.
Step 3
From minced fish we form balls 5-6 cm in diameter. Then we give each one the shape of a cake and put it on a cotton napkin. Put the filling on each cake and bend it in half with a napkin. We tightly connect the edges of the cake and give the semi-finished product the shape of a crescent (if this was not achieved, we make them just oval). Then roll the body in flour, and then in breadcrumbs.
Step 4
Heat the vegetable oil in a deep frying pan, carefully spread the oil and fry on both sides until a bright yellow crust appears. Transfer to a baking dish. We pre-light the oven and heat it up to 200-220 degrees. We put the form in the oven, bring the dish to readiness for 15-20 minutes. Serve on the table with mashed potatoes and fresh vegetables.
