It is known that pumpkin is a very healthy vegetable, it contains vitamins C, B3, B5 and B6, potassium, copper, manganese, fiber, fatty acids and folic acid. But most of all in pumpkin is vitamin A: 100 g of pumpkin provide 75% of the daily human need for this vitamin. The most interesting thing is that vitamin A is completely preserved in the baked pumpkin.

- For pumpkin
- baked in the microwave:
- 2 kg pumpkin;
- 2 tbsp. l of water;
- 300 g sugar;
- raisins;
- ground cinnamon;
- powdered sugar;
- butter;
- a sprig of mint.
- For a pumpkin casserole in the microwave:
- 1kg pumpkin;
- 1 egg;
- 300 g of cottage cheese;
- 300 ml of kefir;
- Rye flour;
- baking powder;
- 1 tsp soda;
- vinegar.
- For pumpkin with potatoes:
- 3 heads of onions;
- 8 medium potatoes;
- 500 g pumpkin;
- 5 medium tomatoes;
- pepper.
- For pumpkin pudding:
- 500 g pumpkin;
- 1 tbsp. millet;
- 500 ml of milk;
- 3 tbsp. water;
- salt;
- sugar;
- vanilla;
- cinnamon;
- half a lemon;
- half an orange.
Instructions
Step 1
Microwave-baked pumpkin
Wash pumpkin, peel, select seeds. Cut the flesh into very thin slices. Grease the microwave ovenware with butter, put the pumpkin there. Add water, sprinkle with sugar, microwave for 12 minutes at 800 watts.
Step 2
Add raisins and cinnamon, cook for another 3 minutes. Sprinkle with powdered sugar and garnish with a sprig of mint before serving.
Step 3
Pumpkin casserole in the microwave
Mix the egg with cottage cheese, kefir, quench the soda with vinegar, add flour and stir thoroughly to get a batter. Wash the pumpkin, remove the skin from it, select the seeds and chop finely
Step 4
Grease a glass dish for the microwave, put finely chopped pumpkin there, cover with dough. Microwave for 3-4 minutes at medium power.
Step 5
Pumpkin with potatoes
Cut the onion into half rings. Pour some olive oil into a deep microwave oven, add the chopped onion, lightly fry in the microwave. Cut the potatoes into circles, add to the onions, salt, cook for 15-25 minutes.
Step 6
Wash pumpkin, peel, remove seeds, chop into thin slices.
Add to potatoes, cook for another 7 minutes. Chop the tomatoes, add to the pumpkin and potatoes, pepper, salt and cook with the lid closed for another 10-15 minutes.
Step 7
Pumpkin pudding
Wash, peel the pumpkin, remove the seeds, cut into medium cubes, place in a deep glass dish, cover with water. Cook in a microwave on high power until boiling, 10 minutes
Step 8
Rinse the millet with warm water several times, then hot. Pour a glass of millet into boiling water, cook for 7 minutes. Wash the orange, cut in half, peel off one half. Cut it as small as possible, do the same with the lemon.
Step 9
Heat the milk, but do not boil and add to the millet and pumpkin. Add zest, vanilla, cinnamon, salt and sugar. Cook with the lid closed for another 6 minutes.
