Step 1

To prepare the royal cheesecake, you need to use shortbread dough. To knead it, take flour and check it for debris and impurities. Use only the highest grade flour. If, putting your fingers inside the flour, you feel cold, it means that it is damp, and the flour must be dried.

Then take a sieve with a fine sieve and sift the flour, you can repeat this procedure twice. As a result, you will have a loose, airy base for the future cake. Then, in a ceramic bowl, mix granulated sugar with flour and add salt there. Remove the butter from the freezer and melt to a liquid state, you can cut it into pieces in a softened form. Put butter in a bowl and add baking soda.

Knead the dough with your hands until smooth. The dough will turn out to be a dense consistency, it should crumble and easily come off your hands. Put it in the refrigerator for 35-45 minutes.

Remove the pie from the oven and place the filling over the dough. Then put it back in the oven for 25-35 minutes. It is better not to open the oven door during baking. After the cake is golden brown, you can take it out.
