Instructions
Step 1
Take 200 g of pork liver, lung, heart. Rinse the giblets well. Strip them off. Soak the liver for 1 hour in cold water with a little baking soda before further cooking.
Step 2
Cut offal into small cubes, scald with hot water. Discard the offal in a colander.
Step 3
Melt 3 tablespoons of margarine in a skillet. Place the offal in the skillet. Season with salt and fry, stirring occasionally, until crusty.
Step 4
Peel 4 onions, chop finely. Wash the tomatoes and cut into slices. Place vegetables in a skillet with roasted offal. Mix everything. Continue simmering the giblets and vegetables over low heat.

Put 2 tablespoons of flour in a clean, dry frying pan. Fry it over low heat until golden brown, stirring continuously. Leave it to cool.

Dissolve the cooled fried flour with half a glass of meat broth or water. Stir everything well until the lumps of flour disappear.

Peel 3 cloves of garlic, chop finely or pass through a garlic press. Place the garlic in a skillet with flour and broth. Add 1 teaspoon of 3% vinegar, chopped greens, black ground pepper. Mix everything and bring to a boil.

Combine the fried offal with flour, mix thoroughly and simmer until the offal is cooked.
Step 9
For a side dish with giblets in a tomato, prepare boiled pasta, rice, buckwheat or mashed potatoes. Put the side dish, stewed offal on a plate, pour over everything with the sauce that turned out during cooking. Serve hot.
