- - 800 g whole grain flour;
- - 8 g dry yeast;
- - 2 tbsp. liquid honey;
- - 1 banana;
- - 1 egg;
- - a couple of pinches of salt;
- - 400 ml of coconut milk;
- - 200 g of coconut flakes.
Instructions
Step 1
Heat a glass of water slightly and add honey and yeast. Stir and set aside in a warm, draft-free place to "bubble" the yeast (time will depend on the quality and freshness of the yeast).

At this time, use a blender to mash the banana. Break the egg into a separate container and shake slightly with a fork. Add the egg and coconut milk to the banana. Stir.
Step 3
Sift flour into another container with a couple of pinches of salt, add coconut flakes to it.
Step 4
Pour dry ingredients and yeast into the center of the banana-coconut mixture. Mix well. We spread it on a floured surface and knead the dough for 10-15 minutes. Then we cover it with a towel and leave to come up for an hour.
Step 5
Line the baking dish with parchment. Divide the matched dough into 2 parts and knead each in shape and put it on parchment. Cover with towels again and leave to come up a second time so that it doubles.
Step 6
Preheat the oven to 200 degrees. We send the blanks to the hot oven and bake for 30-35 minutes. A blush on top is a sign of readiness. Next, the bread should be removed from the mold and cooled on a wire rack.
