Potatoes are a root vegetable that is present on our table almost every day. Some people like to fry potatoes, others prefer boiled, mashed potatoes or casseroles. There are many recipes for dishes using potatoes. Sometimes, you want to make something new from ordinary products. Try baked potatoes with carrots.

It is necessary

    • 700g potatoes;
    • 600g carrots;
    • 250g onions;
    • 4 eggs;
    • 100g sour cream;
    • 100g of cheese;
    • 50g butter;
    • 150g of broth (can be made from cubes);
    • a bunch of different greens;
    • salt to taste.

Instructions

Step 1

To cook potatoes baked with carrots, you first need to wash and peel the vegetables. Cut the peeled potatoes and carrots into slices, cut the onions into rings, rinse the herbs (parsley, basil, thyme) and chop finely. Grate cheese on a coarse grater. Prepare the stock from the cubes. Add some greens and beaten eggs to the sour cream, mix everything well.

Step 2

Preheat the oven to 180 degrees. A baking dish 6-7 cm high or grease a frying pan with oil. Put the chopped vegetables in layers into a mold: first a layer of potatoes, then a layer of carrots, and lastly put a layer of onions. Pour the previously cooked broth, put butter grated with shavings on top.

Step 3

Cover the form with a lid and bake in a preheated oven for about 40 minutes. Then pour the egg-sour cream mixture onto the casserole, sprinkle with grated cheese and bake, uncovered, at the same temperature for about 15 minutes.

Step 4

Sprinkle with the remaining herbs before serving.
