Stuffed zucchini

An original appetizer that is ideal for mashed potatoes, boiled rice, pasta dishes. To prepare it, you will need 3 small zucchini, 1 cup of rice, 2 onions, a bunch of parsley, 5 kilograms of tomatoes, 1.5 cups of vegetable oil, 2/3 cup of vinegar (9%), 10 black peppercorns, 1 cup of sugar, 1 glass of sugar, 2 tablespoons of salt, and 3 cloves.

Grind the tomatoes, then add vinegar, a glass of oil, salt, sugar and spices to them. Boil the sauce over medium heat for 10 minutes.

Cut the zucchini lengthwise into halves and remove the seeds from them. Cut the peeled vegetables into 7-8 centimeters long pieces.

Peel and finely chop the onion, fry in vegetable oil. Add rice to a skillet with onions and fry, stirring occasionally, for a few minutes. Then add chopped parsley to the filling, salt and pour in a little water. Cook the minced meat until the rice is cooked, then fill the zucchini with it.

Place the stuffed vegetables in a deep saucepan, cover with tomato sauce and simmer for half an hour. Then transfer them to sterilized jars along with the sauce and roll up. Store the snack in a cool place.
