An appetizer from pickled zucchini is very simple to prepare, it tastes like pickled mushrooms, so you can safely replace them on any table. In addition to zucchini, honey and garlic are present in the appetizer.
It is necessary
- - 1 kg of young zucchini;
- - 1 bunch of purple basil and parsley;
- - 3 tbsp. spoons of liquid honey and wine vinegar;
- - 5 cloves of garlic;
- - 1 teaspoon of salt.

Step 1
For this appetizer, only young and small zucchini are suitable. Cut each zucchini in half, then in half lengthwise, then cut into thin strips with a vegetable peeler. Season with salt, stir with your hands and set aside for half an hour to let the zucchini juice.

To prepare the marinade, you need to take liquid and fragrant honey, add it to a bowl, pour in wine vinegar, stir.

Rinse the bunch of basil and parsley, shake off excess moisture from them, finely chop with a sharp knife. Other fresh herbs are also suitable for a snack - choose according to your taste. Peel 5 cloves of garlic (the amount of garlic can be changed, it all depends on how much you like it), chop, send along with the prepared herbs to the marinade.

Drain the juice from the zucchini, squeeze them out with your hands. Add the marinade to the zucchini, mix, put in the refrigerator for 2-3 hours. During this time, sometimes remove the appetizer from the refrigerator and stir it so that the zucchini is better saturated with an interesting marinade.

An appetizer of marinated zucchini with honey and garlic is ready, it can be served with young boiled potatoes, served as a side dish with fish or meat, or served as an independent spicy appetizer.
