Summer is perfect for making green salads. Arugula contains healthy omega-3 fatty acids, avocados are rich in iron, folate and potassium, and asparagus is an essential source of carbohydrates. A green, healthy and delicious salad of arugula, asparagus and avocado will truly decorate your summer table.

- - 200 g of asparagus;
- - 300 g of arugula;
- - 1 large avocado;
- - olive oil;
- - fresh orange and lemon juice;
- - 60 grams of pine nuts;
- - basil;
- - honey;
- - salt and pepper to taste.
Instructions
Step 1
Rinse and dry the asparagus. Cut into small pieces, moisten with olive oil, season with salt and pepper. Place in a baking tray and cover with aluminum foil.
Step 2
Preheat oven to 250 degrees Celsius. Place the asparagus in the oven for 15 minutes, until the top is tender. While the asparagus is cooking, fry the pine nuts in a skillet without oil until they have a nice golden hue.
Step 3
Cut the avocado and arugula into small pieces and place in a bowl with the cooked asparagus. Add 3 tablespoons olive oil, 1 tablespoon lemon juice, 3 tablespoons orange juice, honey, chopped basil and season with salt and pepper to taste. Mix the resulting arugula, asparagus and avocado salad well, sprinkle with pine nuts and serve.
