- - a pinch of salt;
- - 110 g butter.
- For the cream:

- - 80 ml of lemon juice;
- - 30 g flour;
- - a pinch of salt;
- - 60 ml of heavy cream (35% fat).
Instructions
Step 1
Preheat the oven to 175C, cover the form with baking paper. Sift flour and powdered sugar into a small bowl, add coconut and salt. Put pieces of butter in a bowl and quickly knead the dough with your fingers. We distribute it in shape, tamp it slightly, send it to the oven for 23-25 minutes.
Step 2
At this time, we prepare the cream. In a bowl, mix lemon zest and sugar, rub them with your fingers for 2-3 minutes. Add flour and salt, mix. In another bowl, lightly beat 2 eggs and yolk, add the sugar mixture to them and pour in the lemon juice. Stir the ingredients slowly, but do not beat, so that the mass does not turn out to be airy. Pour in the cream and mix the cream again until smooth.
Step 3
When the coconut crust is ready, turn the oven temperature down to 150C. Distribute the cream evenly over the shape and return the cake to the oven for another 25 minutes.
Step 4
Let the finished dessert cool to room temperature outside the oven, after which we cool it in the refrigerator. Before serving, cut the pie into neat squares and sprinkle with coconut or powdered sugar.
