This fish cooking option is based on the recipe of the classic cordon blue stuffed with cheese. A very interesting and original recipe that will appeal to all fish lovers.

- - 550 g fillet of gilthead;
- - 250 g of chanterelles;
- - 145 g of cheese;
- - 235 g smoked bacon;
- - 315 g of onions;
- - 2 eggs;
- - 165 ml lemon juice;
- - 55 ml of olive oil;
- - salt, garlic.
Instructions
Step 1
First of all, you need to marinate the gilthead. To do this, you need to mix lemon juice with olive oil, add pepper and salt to this mixture, mix everything well. Pour this marinade over the fish and leave it in the refrigerator for about an hour.
Step 2
Peel and chop the onions. Cut the smoked brisket into small squares. Heat vegetable oil in a frying pan and fry the onion in it first, and then add the chopped brisket to it.
Step 3
Rinse the chanterelles and dry them thoroughly, and then finely chop them and transfer to a pan with onions. Season with salt, add black pepper, parsley, mix everything and simmer under the lid for about 12 minutes.
Step 4
Remove the marinated fish from the refrigerator, grate the cheese on a fine grater. First, dip one part of the gilthead fillet in flour, then in grated cheese, then thoroughly cook again in flour. Then take the second part of the fillet and place it on top of the first.
Step 5
Now roll, properly, all the fillets in flour, then dip them in carefully beaten eggs, and then breaded in breadcrumbs.
Step 6
Heat a large amount of vegetable oil in a frying pan and fry the fish in it on both sides until a wonderful golden brown crust is obtained.
