Spring is the time for picnics in the bosom of nature. Therefore, we offer you an interesting recipe for egg pancakes with mushrooms, as an idea for an outdoor snack. The method of preparing such pancakes is quite simple, the list of products is budgetary and affordable. So it will not be difficult to prepare this dish.

As a bonus to the pancakes, you can make a simple sour cream and dill sauce. At the same time, if desired, he will not only complement egg pancakes, but also any other dish.

Ingredients:

  • 6 chicken eggs;
  • 1, 5 tsp potato starch;
  • 300 g fresh champignons;
  • 100 ml of vegetable oil;
  • 2 tbsp. l. plain water;
  • 100 g of hard cheese;
  • 4 tbsp. l. sour cream;
  • salt and black pepper;
  • sour cream optional (for the sauce);
  • dill optional (for the sauce).

Preparation:

  1. Grate hard cheese on a coarse grater.
  2. Pour the starch into a plate, pour 2 tbsp. l. water, stir and leave to swell for an average of 4-5 minutes.
  3. After 5 minutes, drive the eggs into a plate, mix with the swollen starch, 1 tbsp. l. butter and salt, beat with a whisk.
  4. Pour oil into a frying pan and heat it up. Fry 20 egg pancakes with a diameter of 15 cm in hot oil.
  5. Cut the mushrooms into small cubes, fry in oil, season with salt and pepper to taste. If there is ready-made caviar from mushrooms, then it can also be safely used as a filling.
  6. Put one egg pancake on a plate. Bend its two opposite edges inward by about 1 cm.
  7. Put 1, 5 tsp between the folded edges at the beginning of the pancake. mushroom filling and form a roll.
  8. Repeat this procedure until the pancakes and filling run out.
  9. Fold the formed egg rolls with mushrooms into a mold, spread with sour cream and cover generously with grated hard cheese.
  10. Send the form for 5-10 minutes in the oven, preheated to 180 degrees.
  11. Wash the dill, shake it off, chop finely with a knife and put in a bowl. Add sour cream for the sauce to the dill, mix until smooth.
  12. Remove the form from the oven, put the pancakes on a dish and serve with sour cream mixed with chopped dill.
