Product selection features

When buying a liver, you need to pay attention to important qualities: the color should be bright, red-brown, the surface is shiny, glossy, without mucus. The structure of the offal is dense and elastic, the consistency loose with fat indicates that the product is not of the first freshness, from an old cow. The smell of the liver should be slightly sweet, without extraneous combinations.

Considering that it is kept fresh for a rather short period of time (one day), it is necessary to calculate in advance the volume required to prepare dinner or lunch, and put the rest in the freezer. It is not necessary to wash before freezing and store for no more than five months.
