Kachori are fried round patties with mash. The recipe is quite simple and quick. Don't forget to just soak the mung bean overnight. Amazing taste!

- flour - 230 gr
- vegetable oil - 3 tablespoons
- -salt - 1 tsp
- -water - 130 ml
- - ground coriander - 1 tsp
- -cumin seeds - 1/2 tsp
- - ground anis - 1/2 tsp.
- - ground cumin - 1/2 tsp
- - fresh grated ginger - 1/2 tsp
- - turmeric - 1 tsp
- - safoetida - 1/4 tsp
- - cilantro - 1/4 bundle
- -ghee or vegetable oil for frying kachori
Instructions
Step 1
Rinse the mung bean and fill it with purified water. The water should be three times the amount of mung bean. Leave the mung bean to soak overnight.
Step 2
Make kachori dough. To do this, sift 230 grams of flour into a deep bowl. Pour in 3 tablespoons of vegetable oil there. Add one teaspoon of salt and one teaspoon of ground coriander. Rub the butter into the flour with your fingers.
Step 3
Gradually pour 130 ml of water into the resulting mass and knead into a soft dough. Wrap it in a bag and let it rest for 30 minutes.
Step 4
In the meantime, grind the soaked mung bean with a blender, gradually adding water to form a non-liquid mushy mass. In the process, salt the mung bean, you will need a little less than a teaspoon of salt.
Step 5
Fry the spices in ghee (ghee). If you don't have one, you can use butter. First place the cumin grains and grated ginger in the heated oil. Then all the other spices: ground anise, ground cumin, turmeric, asafoetida. Then fry the mung bean mass for a minute along with spices and chopped cilantro. Fresh ginger and cilantro can also be substituted for dried ones.
Step 6
Roll a sausage out of the dough and cut it into pieces. Roll each piece into a cake with a rolling pin. Put the filling in the cake and blind the edge to make a bag. Roll it out again with a rolling pin. Do the same with the rest of the pieces.
Step 7
Heat a large amount of ghee or vegetable oil in a skillet. Fry the kachori over high heat for about 1-2 minutes on each side. Place the finished kachori on a paper or cloth towel to remove excess oil. Enjoy your meal. Cook with love!
