Any food prepared at home is tastier and better. Including smoked bacon. Because the spices used are selected according to their taste. It is not difficult to smoke lard in an airfryer. In addition, you can choose the hot smoking method or the cold one.

- 500 g lard (fresh);
- salt;
- a bag of gelatin;
- seasonings (to taste);
- liquid smoke;
- alder shavings.
Instructions
Step 1
Go to the store and choose a suitable piece of bacon. It will be better if it contains a lot of meat layers. In this case, the smoked product will be tastier.
Step 2
Take the purchased lard and clean it. Remove any windings. To do this, it is enough to scrape it with a knife. Cut the bacon into small pieces.
Step 3
Salt the bacon. Choose coarse salt for this. Iodized will not work, but sea salt, for smoking, will be very good. Rub the salt into a piece of lard thoroughly.
Step 4
Sprinkle with pepper. Black allspice or ground red will do. Lard can be sprinkled with paprika very thickly. This will not add spice, but the bacon will acquire an attractive, appetizing look. Do not sprinkle a lot of black pepper, a small amount will be enough. You can sprinkle lard with spices and aromatic herbs. Any will do. Thyme, sage, rosemary, oregano, or nutmeg. Each of the herbs will add its own unique aroma to the finished product. Garlic (3-4 cloves) is also suitable, for this you need to grind it first.
Step 5
Leave the processed lard in a cool place for one or two days, no more. It should lie down.
Step 6
12 hours before the start of the smoking process, take lard and process it with liquid smoke. This can be done with a paintbrush.
Step 7
Put gelatin in a bowl of cold water. When it swells well, put the bowl on fire and, stirring, heat until the gelatin dissolves. Add red pepper.
Step 8
Dip the lard into the hot gelatin mixture for 2-3 minutes.
Step 9
Put alder shavings in the airfryer (at the bottom) (apple shavings can be used). Moisten it with water.
Step 10
Place the bacon on the grill grate. Set the temperature to at least 65 degrees. Smoke lard for two to three hours. Check the condition of the product periodically. If necessary, re-coat the surface of the fat with gelatin.
Step 11
Remove the prepared bacon from the airfryer. Cool it down. The product is ready to use.
