You will need

  • 4-5 pcs. chicken eggs;
  • one or two ground tomatoes;
  • one medium onion;
  • 100-130 grams of bacon, cooked sausage, cooked smoked brisket or ham (optional);
  • 70-80 grams of cheese;
  • dessert spoon of tomato paste;
  • a sprig of dill;
  • a few basil leaves;
  • a pair of green onion feathers;
  • seasoning "Italian herbs" (to taste);
  • salt (to taste);
  • black and / or allspice (to taste);
  • a few canned olives

Use only fresh eggs (no more than 10 days) without damaging the shell.

You can use only one of the offered meat products, or several at once.

Preparation

Step 1. Wash and dry eggs. Break into a bowl, salt and pepper, add dry seasoning. Stir well until smooth, but do not whisk.

Step 2. Peel the onion, chop finely and fry in olive oil. Use a low heat to make the onions golden, soft and will not burn.

Step 3. Add a dessert spoon of water to the tomato paste, stir. Pour the resulting juice over the onion and simmer for about a minute.

Step 4. Cut meat delicacies into thin cubes (pieces) - brisket, bacon, ham. Add to the onion and continue to sauté.

Step 5. Wash and drain the tomatoes. Cut into wedges, place in a frying pan. Continue frying over low heat until most of the liquid has evaporated.

Step 6. Pour the egg mixture into the pan and distribute all the ingredients evenly.

Step 7. Bring the eggs until tender. To do this, you can simply cover with a lid and stand for the required time (3-4 minutes), but there is another option, in which the dish will turn out to be very soft and fluffy. In this version, it is more convenient to use dishes with a removable handle.

Step 8. Preheat the oven to 180 degrees. After step 6, heat a frying pan with scrambled eggs on the stove (about a minute) and place in the oven for 3-4 minutes to bake.

Step 9. Grate the cheese on a fine grater. Remove the frying pan from the oven, sprinkle the eggs with cheese and put back for a couple of minutes under the top heat so that the cheese melts and bakes a little.

Step 10. Once everything is ready, put the dish on plates, garnish with finely chopped herbs (green onions, basil) and slices of fresh ground tomatoes. Pick out some olives nearby. Additionally, you can use pesto sauce (olive oil with finely chopped green basil), mayonnaise or Greek sauce made from thick (10%) yogurt, lemon juice, finely grated fresh cucumber, garlic and spices.
