Sometimes you want to pamper your family with delicious and healthy pastries. If there is cottage cheese and frozen lingonberries in the house, you can bake a cake. It turns out to be soft, and the berries add a slight sourness. It is prepared from available products and does not require much effort.

Lingonberry contains useful substances and vitamins for the body. In combination with curd dough, an unusual taste is obtained.

For the test you will need:

  • 200 grams of cottage cheese 9%;
  • 10-15 grams of granulated sugar;
  • one packet of vanillin;
  • one medium chicken egg;
  • 100-110 grams of flour;
  • one teaspoon of baking powder.

For filling you will need:

  • 120 grams of Greek yogurt or soft cottage cheese;
  • 10 grams of granulated sugar;
  • the protein of one egg.

For filling:

  • 50-70 grams of lingonberries;
  • 2-3 teaspoons of powdered sugar;
  • flour or cornstarch.

Preparation

In a shallow bowl, stir well the curd with a fork, add vanillin, chicken egg, sugar and mix. The flour is sifted through a sieve or a special mug. Thanks to this, the dough is airy and free of impurities. Baking powder is added to the flour (can be replaced with slaked soda) and mixed. Attach to the curd mass and knead with a spoon or hands. The dough is soft and sticky.

In a separate container, mix Greek yogurt with sugar and protein. Add cocoa, vanillin or coconut if desired. Yoghurt is taken natural, no additives.

Lingonberries are sorted out from garbage, sprinkled with powdered sugar and mixed. To prevent the juice of the berries from flowing out during baking, add a teaspoon of cornstarch or flour.

The split ring is covered with parchment paper, greased with a small amount of butter or sprinkled with breadcrumbs. You can take a silicone baking dish, then do not pre-lubricate with anything. With hands dipped in water, roll the dough into a ball. Distribute along the bottom of a mold or ring, about two centimeters high and form low sides, so that later the filling does not flow out of the cake. Lingonberries are poured onto the dough, spread over the entire bottom and the berries are completely poured with Greek yogurt with protein and sugar. Bake in a preheated oven at 180 degrees for 40-45 minutes.

The finished cake is removed from the oven and oven and left to cool. Before serving, remove from the mold and cut into portions. Sprinkle with additional sprinkles or nuts if desired. Served with tea or milk. The pie is perfect for breakfast or a snack.

If there is no frozen lingonberry, then it can be replaced with any other pitted berries and fruits. Fresh pears, strawberries, or apples work well.
