Gazpacho is a common tomato-based Spanish soup that is served cold. Quite bright and unusual tomato soup is complemented by wine vinegar and olive oil. Gazpacho soup is very healthy because it consists mainly of fresh vegetables.

It is necessary

  • - 1 kilogram of tomatoes;
  • - 200 grams of cucumbers;
  • - 200 grams of red bell pepper;
  • - 50 grams of white bread;
  • - 1 tbsp. wine vinegar (can be replaced with lemon juice);
  • - 2 cloves of garlic;
  • - pepper, salt;
  • - optional wheat croutons upon serving.

Instructions

Step 1

Pour boiling water over the tomatoes for about 5-10 minutes. Make a criss-cross cut on each tomato and remove the skin. Cut out the stem and cut the tomatoes into large pieces.

Step 2

Peel the seeds from the pepper, cut it arbitrarily.

Step 3

Peel the cucumbers, cut them into pieces at random.

Step 4

Cut the garlic into slices.

Step 5

Place tomatoes, cucumbers, bell peppers, garlic in a blender. Whisk thoroughly until creamy.

Step 6

Salt and pepper the soup, add bread, previously soaked in two tablespoons of water.

Step 7

Pour in the olive oil, vinegar and whisk again, after which the gazpacho will turn orange.

Step 8

Place the soup in the refrigerator for a few hours until it cools down. If you don't have time to wait, add ice cubes to the soup and beat in a blender to cool quickly.
