Fly away birds - this is a very common dish in Italy, it is a meat kebab. The dish acquired its name in ancient times, when it was customary to fry small game caught on a hunt on a spit.
It is necessary
- - 12 pieces of pork (50 grams each);
- - 100 grams of brisket, diced;
- - 24 sage leaves;
- - 24 strips of smoked brisket;
- - 150 grams of sausages.
- For the sauce:
- - 70 grams of butter;
- - 1/2 glass of white wine;
- - 5 sage leaves;
- - 2 sprigs of rosemary;
- - ground pepper to taste.
Instructions
Step 1
Cut the brisket into 16 equal pieces. Beat the pieces of meat with a hammer, cut into several pieces so that the width is about 6-8 centimeters. Place a sage leaf and 3 brisket cubes on the beaten meat. Wrap the meat in such a way as to make rolls.
Step 2
Wrap each roll with a strip of smoked breast. Place the meat on a wooden stick, then a piece of sausage, again a meat roll, a sausage and a roll at the end. You should get 8 kebabs.
Step 3
Melt the butter in a wide frying pan, add the rosemary and sage. Add the kebab and saute over low heat on all sides. When the kebab is browned, sprinkle with white wine and sprinkle with ground pepper.
Step 4
Fry the dish for 20 minutes, add broth or hot water if necessary. Sprinkle the finished "flown away" birds with salt.
