Borleves is a type of Hungarian soup. Such a light, slightly heady sweetish dish is usually served with Christmas dinner. This soup not only warms up and awakens the appetite, but also improves communication between the audience.
It is necessary
- - 3 oranges (medium);
- - 1/2 tbsp. water;
- - 1/3 Art. sugar (brown);
- - 4 boxes of cardamom;
- - 1 stick of cinnamon;
- - 3-4 carnation buds;
- - 3 tbsp. white wine (dry);
- - 6 yolks.
Instructions
Step 1
Wash the oranges and remove 2-3 strips of zest without white pulp from one fruit with shavings. Squeeze juice from all oranges.
Step 2
Pour water into a saucepan, add zest, sugar, cinnamon, cardamom and cloves. Bring the water to a boil, cover the container and cook for 3 minutes.
Step 3
Pour 1/3 of the squeezed juice into a saucepan with water and let the mixture boil, then leave the juice with spices under the lid for 20 minutes.
Step 4
Pour wine and the rest of the juice into the present mixture, put it on minimal heat and bring to a boil. Remove the saucepan from heat and keep the wine mixture hot.
Step 5
Beat the yolks with a whisk in a heat-resistant container. Whisking, add 1 tbsp each. l. hot mixture - in total, 2 glasses of wine should be added to the yolk cream.
Step 6
Pour the resulting mass into a saucepan with the remaining wine mixture and, whisking, heat everything again.
Step 7
Pour the prepared soup into small warm bowls or heat-resistant glasses and serve immediately. Sprinkle with ground spices if desired.
