Filo (or phyllo) is the finest unleavened dough that is often used in Greek cuisine. It can be used to cook various dishes, including pies, which require a minimum of time to cook. Filo dough does not need to be cooked; it is sold in almost all major stores.

  • Ingredients for 6-8 persons:
  • - 3 tablespoons of olive oil;
  • - 6-8 sheets of filo dough;
  • - 50 g bread crumbs;
  • - 100 g of asparagus;
  • - 300 g of young zucchini;
  • - 6 eggs;
  • - zest of 2 lemons;
  • - a handful of parsley, basil, or mint (you can use a mixture);
  • - 200 g feta cheese;
  • - 200 g low-fat sour cream;
  • - a few branches of any greenery for decoration (optional);
  • - salt and pepper.

Instructions

Step 1

Preheat the oven to 180C, put a baking sheet in it to warm up. Lubricate a form measuring 18 by 25 centimeters with a small amount of oil, cover it with three sheets of baking paper (this will help to remove the cake from the mold without damaging it).

Step 2

Put the filo dough sheets one at a time, greasing each of them with olive oil and sprinkling with a small amount of bread crumbs. When the last sheet is in shape, carefully fold the edges of all sheets so that the cake has beautiful sides.

Step 3

Cut the asparagus in half, cut the zucchini into slices, salt and pepper the vegetables, sprinkle with oil and put on a preheated baking sheet.

Step 4

Put the form with the filo dough on the top shelf of the oven, and the baking sheet with vegetables on the bottom, leave it in the oven for 10 minutes. At this time, beat the eggs in a bowl.

Step 5

We take out the vegetables and the base for the pie from the oven. Grease the filo dough with a small amount of the egg mixture, return the mold to the oven for 5 minutes.

Step 6

Add lemon zest, chopped herbs, sour cream, salt and pepper to the remaining egg mixture. Mix the ingredients thoroughly.

Step 7

Put half of the baked vegetables in the mold. Spread the egg-sour cream mixture with herbs on top. We spread the remaining vegetables and feta cheese slices. We bake for 40-50 minutes.

Let the cake cool down and decorate with any greens if desired.
