Gnocchi are oval-shaped dumplings native to Italy. They can be a main course or an appetizer, always served with a sauce, and they are prepared from flour, cheese, potatoes or spinach.

It is necessary

  • For gnocchi:
  • - yolks - 5 pieces;
  • - flour - 0.5 cups;
  • - Parmesan - 100 g;
  • - low-fat cottage cheese - 300 g;
  • - pepper and salt.
  • For the sauce:
  • - cream - 100 ml;
  • - butter - 2 tablespoons;
  • - flour - 1, 5 teaspoons;
  • - salt and nutmeg to taste.

Instructions

Step 1

Rub the cheese on a fine grater, sift the flour, rub the cottage cheese through a sieve. Add salt and pepper to taste, yolks, flour and half of the grated cheese to the curd. Knead the elastic and homogeneous dough, wrap the cling film, put it in the refrigerator for 30-40 minutes.

Step 2

We form a sausage from the dough, cut it into small pieces, make balls out of them. Dip each ball lightly in flour and flatten it with a fork to leave strips.

Step 3

Boil the gnocchi in salted boiling water in portions at the rate of 5 minutes per batch.

Step 4

For the sauce, melt the butter in a frying pan, add the flour and stir quickly until the mixture turns golden brown. Pour in the cream in a thin stream, stirring occasionally, bring to a boil. Season to taste with nutmeg and salt.

Step 5

Serve gnocchi with sauce and any herbs. On request, we accompany the meal with a glass of white wine.
