Vegetable salads, one of the ingredients of which is celery root, are indispensable as a source of vitamins, especially in winter. This root crop is especially valuable because it is able to maintain all its beneficial properties until spring. Salads with celery root will be an excellent prevention of vitamin deficiency and a decoration of your menu.
Beetroot, celery and apple salad
To prepare this salad you will need:
- 1 raw medium beetroot;
- 150-200 g of celery root;
- 1 medium carrot;
- 1 sweet apple;
- 2 tbsp. olive oil;
- juice of ½ lemon;
- 1 tsp mustard sauce;
- 1 tbsp. light liquid honey;
- ground black pepper;
- fresh herbs;
- salt to taste.
Wash the beets, carrots and celery root, peel and grate everything on a coarse grater. Place in a deep bowl. Peel and cut the apple into small cubes. Refuel. For her, squeeze the juice of half a lemon in a separate bowl and mix it with honey and olive oil until smooth. Season with salt and pepper, pour over the dressing, stir and put in a salad bowl, sprinkle with fresh finely chopped herbs.
Celery and orange salad
For this vitamin salad, take:
- 4-5 young celery roots;
- 1 large and sweet orange;
- 2 medium-sized sweet and sour apples;
- 2 sweet bell peppers of different colors;
- 3 tbsp. low-calorie sauce mayonnaise;
- 3 tbsp. fat-free sour cream;
- fresh herbs;
- ½ lemon;
- ground black pepper, salt - to taste.
Peel the celery, peel the apples and oranges. Cut the celery into thin slices, the apples into small slices. Disassemble the orange into slices and cut each across into 6-8 slices. Put everything in a bowl. Remove the zest from the lemon with a vegetable peeler and finely chop it. Squeeze the juice out of the lemon and sprinkle the contents of the bowl with it, salt and pepper it, add mayonnaise and sour cream, mix everything well. Cut the bell pepper into rings 2-2.5 cm wide. Put the resulting pepper cylinders on plates and fill them with the prepared salad. Sprinkle the salad on top with lemon zest and a small amount of finely chopped fresh herbs.
This salad goes especially well with fish and poultry dishes.
Celery and kiwi root salad
To prepare this exotic salad, which may well become a festive table decoration, you will need:
- 200 g of celery root;
- 3 pcs. ripe kiwi;
- ½ cup of cream, 10% fat;
- 1 tbsp. soy sauce;
- 2 tbsp. cognac.
Make a salad dressing. To do this, whisk the cream with a mixer or whisk, mixing it with soy sauce. Then pour this mixture into a small saucepan, add brandy to it, stir and cook over low heat until the contents of the saucepan are halved. Do not let the sauce simmer, or the cream may curdle. Remove the finished sauce from the stove, cover with a lid or a clean napkin and let it cool at room temperature.
To serve this salad, you need to use a transparent glass salad bowl, in which this dish will look especially impressive.
Peel the celery root, gently peel the kiwi. Cut the celery into thin slices and then chop into strips. Kiwi can be cut in half and then cut into semicircular slices. Arrange the celery and kiwi in layers, sprinkling each layer with a creamy sauce. Top the salad can be decorated with kiwi slices and sprigs of fresh herbs, lettuce leaves.
