Celery is deservedly recognized as one of the most useful plants, moreover, celery roots, petioles, and leaves are also used for food. Root celery can be used to make simple, tasty and, most importantly, extremely healthy meals for the whole family.
Choose the amount of ingredients in all recipes to your liking.
Root celery salad. Peel a large celery root, cut in half and boil in salted water. Finely chop a couple of pickled or pickled cucumbers, chop dill and parsley. Cut the cooled celery root into strips. Mix all the ingredients in a bowl, adding a pinch of fine salt and black pepper. Salad dressing options: vegetable oil, light mayonnaise mixed in half with sour cream, just mayonnaise or sour cream.
Raw celery root salad. Rinse celery root and carrots well, peel, grate. Boil 2-3 eggs and, after cooling, grind. Peel a large onion, chop and lightly fry in vegetable oil, let cool. Then mix all the ingredients in a bowl, add salt and pepper to taste.
Root celery soup. Take a couple of potatoes, carrots and raw celery root, rinse well, peel and cut into small slices. Peel and chop the onion. Boil a couple of hard boiled eggs. Lay vegetables at the bottom of the pan, pour a glass of water, add a piece of butter. Simmer a little, then add 1-1 ½ liter of boiling water, salt and bring the soup until tender. Chop parsley, cilantro, dill finely. Divide the boiled eggs into quarters or cut them in an egg slicer. Arrange the eggs in bowls and sprinkle with chopped herbs before serving.
Roasted celery root. Rinse two large celery roots, peel, boil in salted water and cut into small slices. Squeeze some juice from the sliced lemon onto the celery, stir and let sit for a few minutes. Pour pieces of celery in flour and lightly fry in vegetable oil. Fried celery can be served on lettuce leaves.
