- -1/2 cup dry red lentils
- -2 glasses of water
- -1/2 Art. coconut oil
- -1/4 tsp paprika
- -2 medium yellow onions, diced
- -6 cloves of garlic, chopped
- -4 dry bay leaves
- 1- medium celery root, rinse, peel, finely chop
- -3 medium red potatoes, diced
- - a pinch of kosher salt
- -4 cups vegetable broth
- -1 tsp miso paste
Instructions
Step 1
In a small saucepan, bring lentils and water to a boil. Reduce temperature to low, cover and simmer for 10 minutes or until lentils are tender. Drain and set aside.
Step 2
In a very large skillet or soup pot, heat the coconut oil over medium heat. Add paprika and fry for about 30 seconds. Add onion, garlic and bay leaf. Simmer for about 10 minutes, until the onion is tender. Then add celery root and potatoes. Sprinkle with a pinch of salt and simmer again for another 10 minutes.
Step 3
Pour the chicken stock into a saucepan. Bring to a boil, then reduce heat to low and cover. Simmer for 10-15 minutes, or until potatoes and celery are tender.
Step 4
Remove the bay leaf and thoroughly move the entire soup in a blender. Add the miso paste and stir on high speed for a few minutes, until the soup is smooth and smooth.
Step 5
Pour the mixture from the blender into a large skillet or soup pot containing the lentils.
Step 6
Serve hot. Sprinkle with a little paprika and olive oil before serving.
