Instructions
Step 1
Take three medium-sized squid carcasses (about 500 g), three eggs, 125 g flour (a few spoons) and 125 ml of light beer. For squid in batter, it is better to choose medium-sized carcasses (about 20-25 cm), then the batter will not stick together inside the rings, and the rings themselves will fit perfectly in the pan.
Step 2
Remove the skin from the squid and pull out the chitinous core. To quickly rid the squid of its skin, soak it in hot water for five minutes. Do not cook for a long time, as the carcasses can become tough. Then take the peeled squid and dip in boiling and salted water (1 tablespoon of salt) for two minutes. After the second cooking, take out the squid carcasses, they should decrease in size and become "elastic". Remove the squid from the boiling water and cut them into rings.
Step 3
Prepare the batter.
Method one: Gently separate three eggs and remove the whites. Whisk them into a thick foam. Separately stir three egg yolks with beer and flour until smooth. Pour the whipped egg whites into it and mix well again, salt to taste. Second method: take five tablespoons of flour, three tablespoons of vegetable oil, half a lemon, two eggs. Whisk the whites into a thick foam. Dilute the flour with one glass of beer or water. Add oil and mix with whites. Add lemon juice and mix.
Step 4
Prepare squid rings. Heat the oil in a saucepan and fry the squid rings in it, having previously dipped them in batter. Fry until the batter is "baked", then immediately take out the rings and put them on a napkin. This will allow the excess oil to be absorbed into the tissue.
Fry all the rings, then place them on a baking sheet. Place them in the oven to bake until golden brown.
Step 5
You can fry the rings in another way. Put the skillet on fire and add oil. Dip the squid rings in the batter and place in the skillet. Fry the squid in batter until golden brown. Then remove the rings and place them on a napkin. This will allow the excess oil to be absorbed into the tissue.
