Instructions

Step 1

Peel the squid carcasses. Put them in a bowl and cover with boiling water. Most of the skin will curl quickly. Drain the water immediately. Rinse the squid under cool running water, using your hands to remove any film residues. Carefully remove the entrails, being careful to maintain the integrity of the carcass, and then wash thoroughly. Blot the squid carcasses with a paper towel and cut into thin rings 1 to 2 cm wide.

Prepare beer batter. To do this, chill the beer until ice cold. Combine 2 eggs, 1 cup flour, beer, salt and red pepper. Stir the mixture until smooth. The batter should have a consistency like liquid sour cream.

Heat vegetable oil in a saucepan. Dip the squid rings with a fork into the beer batter and place in the skillet. There should be enough oil to completely cover the squid.
