Ingredients:

  • 1 medium-sized chicken egg;
  • 5 g yeast (dry);
  • salt;
  • ½ cup odorless sunflower oil;
  • 2 fresh squid;
  • 1 tablespoon of vodka;
  • 200 g wheat flour;
  • ½ glass of purified water.

Preparation:

  1. First thing you need to do is prepare the batter. To do this, separate the white and remove the yolk in a separate cup. Further, salt is added to the chicken protein and whipped into a stable foam using a mixer. Then the whipped protein is removed to a cool place.
  2. Next, water, vodka, yeast are added to a cup with yolk and everything is mixed well. Then pre-sifted flour is poured into the same place. After this mass becomes homogeneous, you need to add the pre-beaten protein to it. However, this must be done very carefully. Gently lay out the protein mass, and then mix it with light movements with the yolk. In doing so, try to keep the final mass fairly airy.
  3. Prepare the squid. To begin with, they are cleaned and all the insides are carefully removed. Then the seafood is placed in a deep cup and freshly boiled water is poured into it. Wait a couple of minutes, remove the squid and let cool. After that, they are cut into rings about 1-1.5 centimeters wide.
  4. Now you can start frying the rings. To do this, you need a deep enough, but not very wide saucepan or frying pan. Sunflower oil is poured there. There should be enough of it so that the rings float in it. The oil needs to be hot enough to produce smoke.
  5. After that, take a fork, pin one ring on it and gently dip it in the batter, and then dip it in hot oil. It must be fried until a bright golden crust forms. All other rings are fried in the same way. They should be laid out on a paper towel or spread out napkins so that excess oil is absorbed into them.
  6. You can serve such delicious squid rings with mayonnaise, ketchup, as well as any other sauce that you like best.
