It is necessary

    • 0.5 kg squid
    • 4 eggs
    • 1 glass of beer
    • 1.5 cups flour
    • salt
    • vegetable oil

Instructions

Step 1

Clean the squid carcasses from the film covering them, remove the inner ridge, cut off the tentacles, thoroughly rinse the resulting tubes, dry them with a towel, cut into rings. Place the resulting rings on a napkin to drain the last remaining moisture.

Step 2

Separate the yolks from the whites, put the whites in the refrigerator to cool slightly. In a separate bowl, combine the yolks with beer, flour and salt into a thick dough. Instead of beer, you can use any other liquid - milk, water, and even brine.

Stir the dough until smooth.

Step 3

Remove the whites from the refrigerator, beat with a mixer at high speed until a stable foam. Gently mix the protein foam into the existing dough.

Step 4

Take squid rings one at a time, dip them in batter and dip them in boiling oil for 1-2 minutes. It is enough just to wait for the moment when the batter grasps around the squid, and you can immediately remove it from the oil. Dry the finished rings on a napkin to remove excess fat from them.
