It is necessary

  • - 500 ml of milk;
  • - 1 liter of natural Greek yogurt;
  • - 100 g of sugar;
  • - 250 g fresh cherries;
  • - 3 tablespoons of cornstarch;
  • - 70 g cream cheese;
  • - 250 ml cream (33-38%);
  • - 170 ml of corn syrup;
  • - 0.5 teaspoon cinnamon

Instructions

Step 1

Place a colander over the pan, lining the bottom, folded in several layers with gauze. Pour Greek yogurt into it, which, in terms of consistency, can be replaced with yogurt from Prostokvashino.

Step 2

Wait for the whey to drain, it will take about 4-5 hours, to speed up the process, you need to stir the mass periodically.

Step 3

Transfer the thickened yogurt into a container, you should get a mass of about 400 g. Put in the refrigerator. Place the cream cheese in a bowl, beat with a mixer.

Step 4

Dissolve starch in 100 ml of milk, add cinnamon. Place 400 ml of milk in a saucepan, add cream, then add sugar and finally corn syrup (can be replaced with any syrup).

Step 5

Heat the creamy mixture over low heat for about 10 minutes. Remove from heat and gradually pour in the starch-milk mixture in a thin stream, stirring constantly.

Step 6

Returning the pan to the heat, continue cooking for another 3 minutes, until the mixture thickens. After removing from heat, cool.

Put cream cheese in a large bowl, add creamy milk mixture, yogurt.

Step 7

Stir thoroughly until smooth, transfer to container, cover with lid. Refrigerate for 12 hours (preferably overnight).

Step 8

Remove the seeds from the cherries, keeping some of the berries for decoration, chop the rest with a blender, put them in the refrigerator. Combine ice cream base with cherry puree, place in freezer for 3-4 hours.

Step 9

It is advisable to take out the ice cream every hour and stir it so that it does not crystallize. At your discretion, ice cream can be frozen in molds.

Step 10

Garnish with cherries when serving yoghurt ice cream.
