300 grams of chocolate with a minimum cocoa content of 60% must be melted in a steam bath. To do this, place it in a small glass dish, dividing it into small pieces. Pour some water into a saucepan and place over medium heat. Reduce the heat as soon as the water boils. Place a glass container with chocolate on top of the saucepan. Under the influence of steam, it will begin to melt. Remember to stir the chocolate regularly. Add 150 grams of butter. Stir the mixture well.

Whisk 6 egg yolks with 2 tablespoons of granulated sugar for 30-40 seconds. To do this, you can use a mixer or blender. Add this mixture to the melted chocolate and stir. Beat 6 egg yolks well with 2 tablespoons of granulated sugar using a blender until a thick foam forms. Add a third of the mixture to the chocolate and stir. Next, gently stir in the rest of the egg whites.

Prepare a springform pan for baking chocolate mousse. Line the containers with baking paper. Place half of the thinly sliced fennel on the bottom. Then fill the mold with chocolate mousse. Bake in an oven preheated to 160-180 degrees for 20-30 minutes.
