Sweet oranges work well for this recipe, but sour oranges can also be used, depending on your personal preference. Wash the oranges and grapefruit, pat dry and peel. Separate the juicy pulp of oranges and grapefruit from the white films, as they add bitterness to the taste.

On a wide, flat plate with a slight raised edge, place the fennel in an even layer, then the orange and grapefruit slices. Rinse the greens in cool water.
