Creamy cucumber soup with smoked meats is an unusual and tasty first course. The soup is quick and easy to prepare. One serving of soup contains 265 kcal. The specified amount of food is enough for 4 servings.

It is necessary

  • - smoked meats (bacon) - 200 g;
  • - cucumbers - 2 pcs.;
  • - onion - 1 head;
  • - cream (33%) - 200 g;
  • - butter - 30 g;
  • - water (or vegetable broth) - 500 ml;
  • - dry white wine - 100 ml;
  • - dill greens - 30 g;
  • - lemon - 1 pc.;
  • - salt - 0.5 tsp;
  • - ground black pepper - a pinch;
  • - nutmeg (ground) - a pinch.

Instructions

Step 1

Cut the onion into small cubes. Melt the butter in a deep saucepan, fry the onion until transparent.

Step 2

Rinse the cucumbers with water, cut in half lengthwise. Remove seeds (you won't need them). Cut the cucumbers into thick half rings.

Step 3

Combine cucumbers with fried onions, add wine. Place the mixture on low heat and simmer until most of the liquid has evaporated. Then pour in the cream and water. Cook the soup for another 15-20 minutes.

Step 4

Grind the soup with a blender until smooth. Season with salt, pepper, add nutmeg.

Step 5

Cut the smoked meats into thin strips. Chop the greens finely. Pour some soup into a serving plate, top with a straw of smoked meat, pour over with lemon juice and sprinkle with herbs. The dish is ready!
