You need to cook the cake a day before the holiday so that it has time to soak in a cool place. The type of alcohol in which you need to soak cherries does not matter, in any case, the berry will acquire a sour, pleasant taste.

Drunk cherry cake: recipe number 1

For cooking you will need:

- 250 g butter (200 g for cream, 50 g for biscuit);

- 1, 5 Art. Sahara;

- 2 chicken eggs;

- 1 tsp. vanillin;

- 1 tbsp. milk;

- 1, 3 tbsp. flour;

- 0, 75 st. cocoa;

- 2, 5 tsp baking powder for dough;

- 2-3 pinches of salt;

- 450 g cherries;

- 0, 5 tbsp. rum or cognac;

- 0.25 g of water;

- 3 tbsp. icing sugar;

- 450 g cream cheese (Mascarpone, Philadelphia, Almette);

- 4 tbsp. l. cherry syrup.

Rinse the cherries under running water and set aside a little to decorate the cake. Remove the seeds from the rest of the berries. Fill the cherries with rum and leave for an hour, then put them in a colander, leave the rum. Preheat oven to 180 ° C and grease two baking dishes with oil and flour.

Now you can start making the dough. To do this, combine 4 tbsp. l. butter, 1, 5 cups of sugar, 2 eggs and vanillin, beat with a mixer for 10 minutes. Add warm milk and mix thoroughly. Mix the flour, cocoa, a pinch of salt, and baking powder separately. Sift it all into the dough. Stir the dough with a spatula until smooth. Pour the dough into molds and bake for half an hour. Check doneness with a dry wooden toothpick or match.

While the cakes are cooling, start preparing the cream. To do this, whisk 200 g of butter with powdered sugar, add salt. Increase mixer speed gradually, then add cream cheese and syrup. Refrigerate the cream.

Cut the cakes in half lengthwise and saturate the bottom layer with the rum you have left over from the cherry. Spread out a quarter of the cream, then a layer of cherries. Cover the first crust with the second and repeat with the remaining crust in the same way. Cover the cake with cream, sprinkle the sides with grated chocolate or cocoa. Don't forget to garnish the cake with some cherries aside.

Let the finished cake cool and cut it in half. Remove the middle from the bottom cake. To do this, you need to make cuts in a circle.
