- - lettuce leaves
- - bay leaf
- - salt and pepper to taste.
Instructions
Step 1
Clean and gut the pike perch, remove the head. Separate the fillets from the bones in the form of long plates, salt and pepper everything.
Step 2
Boil the broth from the head, bones, add salt, bay leaf of pepper to the water. After cooking, strain the broth so that there are no seeds.
Step 3
Pass the salmon fillet through a meat grinder. Add an egg, fish broth 2 tbsp to the chopped salmon. l., pepper, salt, butter and beat with a mixer, or mix thoroughly. Cut the greens and add to the resulting mass.
Step 4
Spread the fillet plates in the form of a rectangle on cheesecloth, put minced meat, olives, herbs on top. Connect the edges of the fillets and form into a roll with cheesecloth. Wrap in gauze and tie with a thread.
Step 5
Put the resulting rolls on the bottom of the pan and pour the broth. Put on low heat and cook for no more than 25 minutes.
Step 6
After cooking, cool the rolls, remove the gauze. Carefully cut each roll and put on a dish pre-decorated with salad leaves. Top with cherry tomatoes and lemon.
