  • For ice cream:
  • - milk 250 ml
  • - heavy cream 375 ml
  • - sugar 65 g
  • - brown sugar 65 g
  • - cream cheese 225 g
  • - yolks 5 pcs.
  • - vanilla
  • - rum 1 tbsp. l.

Step 1

Caramelized Bread Crumbs: All bread is colored into very small pieces. The largest piece should not be larger than the grain of corn. You can melt butter in a saucepan using the microwave, which will help speed up and simplify the process. Bread crumbs, sugar, salt and cinnamon are poured into the melted butter. Everything is carefully and thoroughly mixed. A small baking sheet is taken, the soaked bread mass is distributed in it and baked in an oven preheated to 180 degrees for about 15 minutes. When baking, the sugar should melt, and the crumbs themselves should be fried. Let the baked crumbs cool.

Step 2

Ice cream: combine milk, 125 ml cream and sugar, place in a saucepan on the stove and bring to a boil. Mix remaining cream in a bowl with cream cheese. Take another bowl and grind the yolks in it. Stir constantly, pour hot milk into the yolks in a thin stream.

Step 3

Put the mixture on fire again. Cook without stopping stirring until the mixture thickens. Pour the ready-made custard into the cheese-cream mixture. Mix everything thoroughly, add vanilla and rum.

Put the mixture in the refrigerator overnight. In the morning freeze the cooled mixture in an ice cream maker. Add bread crumbs at the very end. The finished ice cream is transferred to a container and stored in the freezer.
