Almost no festive meal is complete without this dish. And Olivier salad for the New Year is already our folk tradition! Everyone associates its taste with the atmosphere of a favorite holiday. Ingredients are available at any time of the year and for any wallet, and preparing Olivier is extremely simple. This is a traditional recipe for a dish familiar to us from childhood.
It is necessary
- For 5 servings:
- - potatoes - 5 pcs. medium size;
- - boiled sausage (or boiled chicken meat) - 300 g;
- - eggs - 5 pcs.;
- - canned green peas - 1 glass;
- - pickled cucumbers - 2 pcs.
- - carrots - 2 pcs. medium size;
- - green onions - 1 bunch;
- - salt, pepper, mayonnaise - to taste.
Instructions
Step 1
We wash the potatoes with carrots well, fill with water and cook until cooked for 20-30 minutes. It is important not to digest. Vegetables must be cooked in the peel - this way they retain their taste, their pieces do not lose their shape in the finished salad. When choosing carrots for Olivier, pay attention to their ripeness. It can be identified by its color: it should be pure orange, without greenish streaks.
Step 2
Fill the eggs with water and put on the fire. Cook hard-boiled - about 10 minutes from the moment the water boils.
Step 3
Remove the finished potatoes, carrots and eggs from the stove, drain the broth and let them cool completely.
Step 4
To prepare Olivier, you can use boiled sausage or boiled chicken.
If we cook with meat: take 1-2 chicken legs, rinse well, fill with water and put on fire. After boiling water, cook for about 30 minutes. Take out the finished meat, cool and cut into small pieces.
If cooking with sausage: cut 300 g of boiled sausage into small cubes (about 1.5 cm).
Step 5
Cut potatoes, carrots, eggs and pickled cucumbers into equal cubes - 1.5-2 cm on one side.
Step 6
Cut the green onion into pieces no more than 0.5 cm. We take the amount to taste - the more onion, the spicier the salad. On average, 1 small bunch leaves. You can also take 1-2 small heads of regular instead of green onions. Chop ordinary onions as finely as possible.
Step 7
Put the chopped ingredients in one large bowl, add 1 cup of canned green peas (no juice) there. Salt and pepper if desired. Mix everything carefully. Add mayonnaise and mix again. It is recommended to stir the salad carefully, from top to bottom, so that the cubes and peas do not fall apart.
