Beef stewed in bread kvass is an old Russian dish. During the cooking process, the meat absorbs the aroma of root vegetables, and kvass softens the beef and gives it a special taste.

It is necessary

    • 500 g of beef pulp;
    • 3 large onions;
    • 2 carrots;
    • 2-3 glasses of bread kvass;
    • 2 tbsp tomato sauce (optional);
    • salt and black pepper to taste.
    • For red sauce:
    • 2 medium carrots;
    • 2 medium onions;
    • small parsley root;
    • 0.5 cups of sunflower oil;
    • 1 tbsp. a spoonful of wheat flour;
    • 2 tbsp. spoons of tomato sauce;
    • 300 g of broth;
    • 3-4 black peppercorns.

Instructions

Step 1

Remove films and tendons from the beef and cut into large slices across the grain. Beat off the meat, salt and pepper.

Step 2

Heat a deep frying pan or saucepan, pour sunflower oil into it. Sear the beef slices on both sides until golden brown and remove from heat.

Step 3

Peel and wash onions, carrots and celery roots. Finely chop the onion, grate the carrots. Put them in a skillet on the pieces of beef and pour in the kvass. Add tomato paste or sauce if desired.

Step 4

Cover the saucepan with a lid and simmer the beef over low heat until tender (about an hour). In the process of stewing, add kvass as needed. At the end of cooking, taste the dish and add salt and pepper if necessary.

Place the cooked beef on a platter. Chill the broth left over after stewing a little and rub with a pestle or sieve through a sieve so that the consistency is uniform. Boil the gravy again and pour over the beef slices.

Step 6

Prepare a red sauce for your meal if desired. Peel vegetables and roots. Chop them into small cubes and fry for ten minutes in vegetable oil. Add tomato puree to them and keep the pan on the fire for another ten minutes.

Step 7

Fry the flour without oil in another pan until light brown. Cool it down and dilute in a small amount of warm broth left over from stewing meat, mix thoroughly and add the rest of the broth.

Step 8

Bring the sauce to a boil, cook for three minutes over low heat. Add vegetables and allspice fried with tomato paste and cook for another ten minutes, stirring occasionally.

Step 9

Pour the prepared red sauce over the beef stew slices, sprinkle with finely chopped herbs and serve. For a side dish, you can cook potatoes, pasta, rice, vegetables.
