  • - 12 boiled eggs;
  • - 2 onions and 2 chili peppers;
  • - 4 cloves of garlic;
  • - 15 g of cilantro;
  • - 100 g of cane sugar;
  • - 80 ml of soy sauce;
  • - vegetable oil;
  • For the sauce:
  • - 4 boiled eggs;
  • - 200 g butter;
  • - 50 g of parsley;
  • - 1 lemon;
  • - salt;
  • For a snack:
  • - 6 boiled eggs;
  • - 150 g of canned cod liver;
  • - 1 red onion;
  • - 50 g of mayonnaise;
  • - 20 g of Dijon mustard;
  • - 30 ml of lemon juice;
  • - 1/2 tsp paprika;
  • - parsley leaves.

Instructions

Step 1

Boiled egg cutlets

Finely chop the egg whites, mash the yolks with a fork, or strain through a sieve. Place a small saucepan or saucepan over medium heat and melt the butter. Transfer the yolk and then the protein mass there, stir well, set aside and cool a little.

Separate the yolks of raw eggs from the whites and add to the prepared mixture along with chopped parsley, pepper and salt. Crumble the bread and gradually add to the minced meat, kneading it with a spoon or hand. Form patties, dip in whipped egg whites, roll in breadcrumbs and sauté in vegetable oil until golden brown.

Remove the puff pastry from the freezer 20 minutes before cooking. Chop green onions and eggs, mix thoroughly and salt. Sprinkle flour on the table, roll out the dough and cut into 12 equal rectangular layers. Spread the egg filling evenly over them, roll up, blind the edges with your fingers and brush with yolk. Line a baking sheet with parchment, place the patties on it and bake at 180oC for 25-30 minutes.

Peel and finely chop the onions and chili peppers, and cut the garlic cloves into slices. Fry everything in a large amount of oil for 3-4 minutes, place on a thick paper towel. Fry whole eggs in the same place. Combine the soy sauce and sugar in a saucepan and simmer until the free-flowing product is dissolved. Place vegetables, egg quarters, cilantro leaves in a salad bowl and pour over sweet and salty sauce.

Chop the eggs finely with a knife or grate. Heat butter in a saucepan or deep skillet until melted. Stir in the egg mass, chopped parsley, squeeze the lemon juice and add salt to taste. Serve the sauce with boiled or baked fish.

Cut the eggs in half lengthways, remove the yolks and grind them in a bowl. Put cod liver crushed with a fork with a little oil, chopped red onion, season with paprika and stir with mustard, lemon juice and mayonnaise until smooth. Fill the egg cups with the filling using a regular teaspoon or pastry syringe. Garnish with parsley leaves.
