Macaroons are the French version of macaroons. In France, it is very popular - macaroons are sold even at McDonald's.

- - 40 g sugar
- - 150 g icing sugar
- - 100 g ground almonds
- - a pinch of salt
- - 1 tbsp. lemon juice
- - 1 sachet of food paint
- Cream:
- - 120 g soft butter
- - 6 tbsp. boiled condensed milk
Instructions
Step 1
Pour nuts, food paint and icing sugar into a cup, stir.
Step 2
Beat cold proteins, lemon juice and salt with a mixer until the mass doubles. Add sugar in two passes and continue beating until smooth.
Step 3
Transfer the proteins to a cup, add a little sugar-nut mixture, mix everything.
Step 4
Add sugar with nuts in medium portions, knead the dough. The proteins will settle, the mass will take on a fluid-heavy appearance.
Step 5
Line a baking sheet with parchment paper. Place medium cakes, about 5 cm in diameter, on a sheet with a pastry bag.
Step 6
Leave the tortillas on the table for 40 minutes to dry. Bake them at 160 degrees for 15-20 minutes.
Step 7
While the cookies on the baking sheet are cooling, prepare the cream. Whisk softened butter, add boiled condensed milk and stir until smooth.
Step 8
Lubricate the cooled cake with cream, cover with a second cake and press gently so that the cream comes out slightly.
Step 9
Place the cookies on a plate and refrigerate for 12 hours.
