Step 1

Transfer the proteins to a cup, add a little sugar-nut mixture, mix everything.

Add sugar with nuts in medium portions, knead the dough. The proteins will settle, the mass will take on a fluid-heavy appearance.

Line a baking sheet with parchment paper. Place medium cakes, about 5 cm in diameter, on a sheet with a pastry bag.
