Purchased ice cream most often disappoints us: what with watermelon, what with raspberries, what with pomegranate - almost all of it tastes like a chemical filler. Do you want to please yourself and your loved ones with a real dessert? Make your own ice cream, for example with pistachios!
It is necessary
- - cream (35%) - 500 g;
- - milk - 500 g;
- - yolks - 10 pcs.;
- - trimolin - 100 g;
- - fine crystalline sugar - 120 g;
- - natural pistachio paste - 100 g.
Instructions
Step 1
Combine milk with cream in a saucepan, place on the stove and bring to a boil. Do not neglect the fat content of the cream! With heavy cream, ice cream crystallizes less (this is important if you cook without an ice cream maker), and most importantly, it turns out much tastier!
Step 2
While the milk mixture is boiling, using a mixer in a separate bowl, beat 10 egg yolks with sugar until frothy and light in color.
Step 3
After removing the pan from the burner, pour the yolks into its contents in a thin stream. In this case, it is necessary to mix very intensively! Add trimoline (it is also an invert syrup, which will negate the possibility of dessert crystallization), stir.
Step 4
Return to stove, on low heat. Simmer until the mixture thickens. Remove from heat.
Step 5
Add pistachio paste, mix thoroughly and pour the mixture into a container. Chill the mixture by placing a container with a container of cold water.
Step 6
Then stir the mixture and place in the freezer. Whisk 4-5 times while setting (every 20 minutes).
