Eclairs are a terrific option for a tea party. To prepare them, you do not need any extravagant ingredients, and you can come up with completely different fillings. Top can be covered with chocolate icing or powdered sugar, garnished with chopped nuts.
It is necessary
- - 100 g butter or margarine;
- - 250 ml. water;
- - ¼ tsp salt;
- - 220 g flour;
- - 4 large eggs;
- - 250 g mascarpone;
- - 120 g icing sugar;
- - 100 ml. heavy cream (20-22%)
Instructions
Step 1
Place a bowl of water on the stove and bring to a boil. Add margarine and salt. When the mixture boils again, add the sifted flour and stir. The consistency of the dough should be uniform but firm.
Step 2
Turn on the preheat oven 200 degrees.
Step 3
Take a separate bowl and beat the eggs lightly in it. Without ceasing to stir the eggs, add a spoonful of dough to them. The finished dough should keep its shape, but at the same time it should be soft.
Step 4
Line a baking sheet with baking paper. Fill a pastry syringe with dough and squeeze the dough onto the paper. The workpiece should look like a straight strip.
Step 5
Place the eclairs in the oven for 30 minutes, and never open the oven while baking. Do not immediately take out your eclairs, but leave them in the turned off oven, otherwise they may settle.
Step 6
Whisk the mascarpone, icing sugar and cream to make the cream. Put the resulting cream in the refrigerator while the eclairs cool.
Step 7
Use a piping bag to fill the raised cavity of the eclairs and sprinkle with powdered sugar on top.
