This is an easy-to-prepare dish that can easily decorate both a festive table and a regular dinner. Please note that it can be safely consumed even by people with diabetes. In terms of time, the entire cooking process will take you about 2 hours: 15 minutes for preparation, and the rest of the time for baking.
It is necessary
- - butter - 1 tbsp. l.;
- - pork loin without bone - 1-1.5 kg;
- - salt - ½ teaspoon;
- - pepper - ½ teaspoon;
- - ground ginger - ½ teaspoon.
- For chutney sauce, prepare the following ingredients:
- - 2 medium mangoes, peeled and diced;
- - ¼ cups of chopped red onions;
- - ¼ glass of crushed red bell pepper;
- - 1 jalapeno pepper without seeds, finely chopped;
- - 2 tablespoons of white wine vinegar;
- - 1 tablespoon grated ginger root;
- - 1/8 spoon of salt;
- - 1/8 spoon of turmeric;
- - 1/8 spoon of ground cloves.
Instructions
Step 1
To begin with, melt the butter in a large skillet with a thick bottom or in a grill pan and fry the pork loin until golden brown, constantly turning the piece. When the meat is cooked through, season it with salt, pepper and ground ginger.
Step 2
We transfer the pork to a heat-resistant form and send it to the oven, preheated to 180-190 degrees Celsius for 1-1.5 hours, the time depends on the size of the pork loin.
The last stage of working with meat: remove the pork from the oven, cover with foil and leave the meat to rest for about 10 minutes so that the meat is saturated with juices and cooled down a little.
Step 3
To prepare chutney sauce with mango, put chopped mango, red onion, bell pepper, wine vinegar, grated ginger root, turmeric, cloves in a saucepan or stewpan, salt and simmer everything over medium heat for 8-10 minutes, stirring occasionally.
In order not to waste time, you can start making chutney sauce while the pork loin is baking in the oven.
Step 4
When the pork loin and sauce are ready, you can serve the dish. Cut the meat into 1.5 cm thick slices, lay out the pork nicely on a plate, put the mango slices on top and pour over the chutney sauce. The dish is ready, you can serve it to the table.
