Zucchini is a dietary and healthy product, and the dishes made from them are very tasty and tender, which is especially important in hot summer weather. Zucchini "under the snow" is one of the options for preparing these vegetables and will be an excellent light dinner or snack.

It is necessary

    • zucchini - 2 pcs.;
    • onion - 1 pc.;
    • carrots - 1 pc.;
    • boiled chicken fillet - 200 g;
    • sunflower oil;
    • sour cream - 150 g;
    • parsley;
    • salt and pepper to taste.

Instructions

Step 1

Wash medium-sized zucchini under running water, cut off the ends and cut them in half. Then, with careful movements with a teaspoon, remove the pulp from them, leaving the walls 0.5 cm thick. Coat the zucchini with vegetable oil on all sides and place in a preheated oven for 15 minutes at a temperature of 200 degrees. The zucchini should be placed with their backs up.

Step 2

Finely chop the onions and carrots, place them in a preheated skillet and sauté over low heat for 5 minutes. Then add the zucchini pulp to them and simmer for another 10 minutes.

Step 3

Pass the boiled chicken fillet through a meat grinder or grind in a blender. Add it to the vegetable mixture and bring everything to a homogeneous mass - it should be juicy. If there is not enough liquid from the zucchini, add a little boiled water. After that, salt and pepper the mixture to taste, transfer it to a plate and add finely chopped parsley.

Step 4

Remove the zucchini from the oven, flip them over, lightly salt the inside and place the prepared filling in them. Then put in the oven for 10-15 minutes. In the middle of the required time, take them out and smear well with sour cream on top.

Step 5

Remove the prepared courgettes from the oven and carefully place them on a large flat dish. Sprinkle with finely chopped parsley on top.

Step 6

Such a dish can also be prepared in a lean version, without minced chicken. To do this, prepare the vegetable mixture as described above, transfer it to a plate and add the diced tomato to it. If you wish, you can also squeeze a few cloves of young garlic into the filling.

Step 7

Zucchini "under the snow" can be used both as an independent dish (with meat) and as a vegetable side dish. The main thing is to pour in a sufficient amount of sour cream and let the zucchini stand in the oven until the degree of readiness you prefer most.
